Manual collection

The cherries of this washed coffee from Apía, carefully harvested at their peak ripeness, undergo an initial flotation selection to eliminate low-density fruits, ensuring only the best beans.

Precise selection

Once selected, the cherries are pulped and subjected to a controlled fermentation for 16 hours, a key step that develops the flavor profile and cleanses the mucilage.

After fermentation, the coffee is washed to remove any residue and carefully dried, resulting in high-quality parchment coffee.

From Colombia to your cup

In the final stage, the dried parchment is threshed and sorted, removing any defects or impurities, until clean, healthy almonds are obtained.
